What’s Important to Us

Authenticity, time, vitality, hand-craftsmanship, respect for nature – a handful of terms that are important to me because they summarize my ideas and principles simply and clearly. All are connected with each other, and you might even find synonyms for each of them. For example, time could be interchangeable with evolution; respect for nature with biodiversity, and authenticity with genuineness, purity or even terroir.

They are all building blocks that define the purpose of reproducing in my wines the place, its climate and geology, and its history and traditions as precisely as possible. And this is why, every day, we carefully observe our vines and the nature that surrounds them, trying to understand their balance and rhythms, and promoting the ecosystem through applying biodynamic approaches.

The principles for working in the vineyard apply also in the cellar. We follow our grapes carefully during vinification, and intervene only when necessary as they’re becoming authentic wine. The pressing is slow and gentle; the fermentation is spontaneous. Everything else is taken care of by time. This often shapes my wines over years – I release them only when theyre in perfect balance - vital, animated and multi-layered.

Manual Cultivation for Flawless Grapes

We work a lot with our hands. We use them to prune 100,000 vines every winter and work the soil under the vines every spring.  Our hands are far more precise and sensitive than machines. With them, we can do things that machines can’t do - things that are so important to us. For example, in our best vineyards, instead of cutting off vine shoots, we wrap them around the wires and ensure that they develop evenly.

And, naturally, we harvest manually. The harvest days are the most important ones of the entire year. So by doing this completely by hand, we make sure  - one final time – that all the grapes are flawless, healthy and perfectly ripe.
